Ingredients

For the rolled biscuit:

  • 4 eggs
  • 100 gr sugar
  • 80 gr of flour
  • 20 gr cornstarch
  • 1 pinch salt
  • 1 tablespoon strong espresso

For the coffee buttercream:

  • 200 gr soft butter
  • 150 gr icing sugar
  • 2 soup spoons strong espresso
  • 1 teaspoon vanilla extract (optional)

For the frosting:

  • 150 gr dark chocolate (minimum 70% cocoa)
  • 100 ml liquid cream
  • 1 tablespoon of strong espresso. The choice of coffee is essential in the balance of flavors. For an optimal experience, opt for an espresso with woody and chocolatey notes, such as a carefully roasted blend of Arabica and Robusta.

Instructions

  • Prepare the rolled biscuit: Preheat your oven to 180°C. Whisk the egg yolks with the sugar until the mixture whitens. Add the strong espresso. Gently incorporate the sifted flour and cornstarch. Beat the egg whites with a pinch of salt and gently incorporate them. Spread the dough on a baking sheet covered with baking paper and bake for 10 to 12 minutes.
  • Roll the biscuit: As soon as it comes out of the oven, unmold the biscuit onto a clean, damp tea towel. Roll it up gently with the tea towel and leave to cool. This step allows the biscuit to take its shape without breaking.
  • Prepare the coffee buttercream: Beat the softened butter with the icing sugar until creamy. Add the espresso and vanilla extract, then continue to beat until the cream is smooth and homogeneous. Unroll the cooled biscuit and spread the cream evenly before rolling it again.
  • Make the icing: Melt the chocolate with the liquid cream and coffee, mixing until you get a shiny glaze. Cover the rolled log with this glaze and let it cool in the refrigerator for at least 1 hour.
  • Decorate and serve: For a festive touch, sprinkle some cocoa powder or add chocolate chips. The log can be served with an organic espresso from Café 9|38 to complete this caffeinated experience.
