Ingredients
  

  • 300 g. whole oat flakes
  • 100 g. crushed hazelnuts (or almonds, walnuts…)
  • 80 g. seeds (sunflower, squash, chia, etc.)
  • 40 g. shredded coconut (optional)
  • 2 tbsp ground flax seeds
  • 60 ml. strong coffee or chilled espresso
  • 3 tbsp melted coconut oil
  • 2 tbsp maple syrup or honey
  • 1 vs. coffee vanilla extract
  • 1 pinch of salt
  • dark chocolate chips (a choice)

Instructions
 

  • to preheat the oven at 160°C (convection heat).
  • Mix the dry ingredients in a large bowl: oat flakes, seeds, nuts, coconut, flax seeds and salt.
  • Prepare the liquid mixture : Combine cooled coffee, coconut oil, maple syrup, and vanilla extract in a bowl.
  • Assembler : Pour the liquid mixture over the dry ingredients. Mix thoroughly until everything is well coated.
  • To cook on a baking sheet lined with baking paper for 25 to 30 minutes, stirring halfway through for even cooking.
  • Let cool completely to obtain a nice crunchy texture. Add the chocolate chips once the granola is cold.
