Cold brew transforms coffee into a smooth, naturally sweet drink, perfect for those who usually find coffee too bitter. Notes

The secret to bitterness-free cold brew

Cold brewing is key to this recipe. Unlike hot coffee, where boiling water quickly extracts all the coffee's compounds, including the tannins responsible for bitterness, cold water selectively extracts the sweet and mild aromas. The result is a coffee that is up to 67% less acidic, naturally smooth on the palate, and requires no sugar to be enjoyed. This method is ideal for sensitive stomachs and those who usually find coffee too harsh.

Why Lungo Bio is ideal

For this recipe, we recommend our Lungo Organic whose notes of caramel, roasted almonds, and citrus create a perfect harmony with the banana. Its 100% Arabica composition guarantees a natural sweetness that is fully expressed during cold extraction. Unlike theOrganic Espresso Containing 20% robusta and possessing a more robust character, the Organic Lungo offers the necessary delicacy for this fruity drink.

The importance of the ripe banana

The secret to a naturally sweet milkshake lies in the choice of bananas. Opt for ripe bananas with a few brown spots on the peel. At this stage of ripeness, the starch has converted into natural sugars, providing intense sweetness and a creamy texture. A green or barely yellow banana will result in a bland, mushy milkshake that requires the addition of sugar. Overripe bananas can also be frozen beforehand in slices, which gives the milkshake an even thicker, icy texture, similar to a smoothie bowl.

Grinding and storing cold brew

A coarse grind is essential for cold brew. A grind that's too fine will result in a cloudy and slightly bitter coffee, even with cold brewing. If you don't have a coffee grinder, ask your roaster to grind your Organic Lungo to a coarse grind, similar to coarse sea salt. Once filtered, cold brew will keep for up to 5 days in the refrigerator in an airtight bottle. You can therefore make a large batch and use it throughout the week for milkshakes, or simply on its own with ice or diluted with sparkling water.

Variations and customization

This basic recipe lends itself to many variations. For a chocolate version, add a tablespoon of unsweetened cocoa powder or a few squares of melted dark chocolate. For a tropical touch, replace one of the bananas with half a ripe mango. Spices like cardamom, nutmeg, or freshly grated ginger add an interesting aromatic dimension. As for milk, oat milk offers a particularly creamy texture and a light, natural sweetness, while almond milk adds a nutty note that complements the coffee beautifully.

Zero waste tip

Don't throw away the coffee grounds after filtering your cold brew! They can be used as a natural body scrub, fertilizer for your plants, or dried and used to deodorize your refrigerator. Cold brew coffee grounds are particularly mild and less acidic than those from traditional coffee, making them perfect for homemade beauty treatments.
