Equipment

  • 1 coffee machine or coffee maker (compatible with ground coffee)
  • 1 teapot
  • 1 Kitchen thermometer (optional but recommended to check the water temperature at 70-75°C)
  • 2 large glasses (minimum 300 ml capacity to serve with ice cubes)
  • 1 pitcher or carafe

Ingredients

  • 100 ml Organic Lungo coffee (freshly prepared)
  • 200 ml filtered water at 70-75°C
  • 2 vs. coffee Japanese sencha green tea (or bancha)
  • 8 to 10 leaves fresh mint
  • 15 ml agave syrup or liquid honey
  • ice cubes
  • a few sprigs of mint for decoration

Instructions

  • Prepare organic Lungo coffee
Start by preparing 100 ml of Organic Lungo coffee with your coffee machine or drip coffee maker. Use approximately 14 grams of ground coffee to obtain a well-balanced lungo. Let it cool to room temperature for 5 minutes. This step allows the aromas to stabilize without shocking the final blend with excessive heat.
  • Infuse the green tea
Meanwhile, heat 200 ml of filtered water to 70-75°C. Do not exceed this temperature to avoid bitterness in the green tea. Place two teaspoons of sencha in your teapot or infuser, pour in the hot water, and let it steep for exactly 3 minutes. No longer. Then remove the leaves to stop the steeping.
  • Prepare the mint
Gently wash the fresh mint leaves. Lightly crush 6 to 8 leaves between your fingers to release their essential oils, then add them directly to the still-hot green tea. Reserve a few sprigs for the final garnish.
  • Combine the liquids
In a pitcher, pour the brewed green tea with mint, then gradually add the cooled lungo. Stir in the agave syrup or honey and mix gently with a long spoon. This step requires a delicate touch to preserve the aromas of each component.
  • Cool the mixture
You have two options. The slow method: let the pitcher cool for 15 to 20 minutes at room temperature, then place it in the refrigerator. The quick method: prepare an ice bath in a larger bowl, submerge your pitcher, and stir regularly for 5 minutes until the drink is thoroughly chilled.
  • Serve with style
Fill two tall glasses with ice. Strain the mixture to remove the infused mint leaves, then gently pour it into the glasses. Garnish each glass with a sprig of fresh mint. Enjoy immediately to fully appreciate the freshness and balance of flavors.

Presentation tips

Opt for tall, clear glasses to showcase the amber hues of this fusion drink. A highball glass or a 300ml tumbler is ideal. The visual contrast between the ice cubes, the light caramel color of the mixture, and the vibrant green of the fresh mint creates an elegant and inviting presentation.
For a more refined touch, serve with a reusable bamboo or stainless steel straw. You can also add a slice of lime as a garnish to enhance the citrus notes of the Organic Lungo. This drink pairs wonderfully with light pastries: almond financiers, madeleines, or Japanese shortbread cookies flavored with matcha tea.

Barista Notes

The secret to this recipe lies in the balance between the two infusions. For this preparation, we recommend our Lungo Organic whose notes of caramel, roasted almonds, and citrus harmonize naturally with the vegetal sweetness of sencha green tea. Avoid organic espresso, which, despite its qualities, would be too strong and unbalance the tea's delicate flavor.
A pro tip: if your drink lacks character, slightly increase the proportion of lungo (120 ml instead of 100 ml). Conversely, if it seems too strong, dilute it with a little cold, filtered water. The ideal serving temperature is between 4 and 6°C. You can prepare this drink the day before and keep it in the refrigerator in an airtight container, but add the fresh mint only when serving to preserve its aromatic vibrancy.
